Healthdata was also available as a disc based offline database, also in the viewdata format.  It seems as if it was mostly a copy of the online content, so we present it here for your delight and access..

    Preservatives often need to be added
 to foods to prevent them deteriorating 
 or becoming spoiled due the action of  
 bacteria or moulds.                    
                                        
    The use of such preservatives gives 
 food a more useful shelf life enabling 
 it to remain fresh and palatable for   
 long after the day of purchase.        
                                        
    Many foods rely on preservatives for
 their customary flavour and appearance.
 The sodium nitrite (E250) and sodium   
 nitrate (E251) used to preserve bacon  
 and ham is also responsible for flavour
 and pink colour of these foods. Ham has
 been prepared in this way for hundreds 
 of years.
